About the Chocolatier

Estelle’s fascination with chocolate started in 2003 after completing a Truffle Workshop in Johannesburg, South Africa.   Having been an IT professional for 17 years, this change in career still required meticulous attention to detail with the added bonus of being creative.

After presenting chocolate workshops for a few years, she decided to formalise her knowledge and completed her certification through Ecole Chocolat's Professional Chocolatier Program, graduating with honours. In addition she completed her Maitre Chocolatier certification in France at the L’Ecole du Grand Chocolat Valrhona.

Guided by David Lebovitz, she visited many chocolatiers in Paris, returning with a wealth of information and the future plans for a chocolate studio.  The studio design was motivated by Jean-Charles Rochoux’s shop in Paris and is based in the Paarl-Franschhoek valley.  Only imported chocolate and fresh local ingredients are used and all tempering done by hand.
